Essential Spirits Alambic Distilleries has been making rum in Mountain View, California since 2006. These are the rums they’re currently producing:

• Sergeant Classick Silver Rum, a pot-distilled, Hawaiian molasses-based rum that’s bottled unaged at 80 proof.

• Sergeant Classick Gold Rum, a version of the base used in their Silver Rum that’s briefly introduced to wood oak chips before it’s bottled unaged at 80 proof.
